Do you know why you're having difficulty peeling off the shell?  It's because the egg is really, really fresh - probably laid yesterday.

In fresh eggs, the albumen, or egg white, tends to stick to the inner shell membrane because there is very little acid present.

Yum!  Thanks, Carlos!  As an egg sits, the shell becomes porous and absorbs air.  The carbon dioxide makes the albumen more acidic, releasing it from the inner membrane, making it easier to peel.

Cappuccino?  Tempting, but no thanks.  So, if you don't want pocked-marked peeled eggs, wait a few days for the eggs to grow older.  Personally, I don't mind how they look.  Fresh is best!

Martha uses a fool proof method.

She puts room-temperature eggs in a pot in a single layer and covers them with at least an inch or two of cold water.  She brings the pot to a boil, covers it with a lid, turns off the heat, and lets it sit for 13 minutes.

Then she removes the eggs from the water and immerses them in cold water to stop the cooking.  And voila! - perfectly hard boiled eggs!

These are the eggs Martha's taking to the wedding set upon this gorgeous faux bois dish.  She's also taking 3 different kinds of salt for the guests to season the eggs with.

    I haven't had a hard boiled egg in ages. I remember years ago during the summer having deviled eggs. Sprinkled with paprika! :)

    I'm surprised you bypassed the java Sharkey? What do you prefer instead? A spot of tea? :)

    Hmmmmm, I wonder how Martha came up with the 13 minutes. I guess it was through trial and error. They look real good. And I must say, Martha has the best eggs in the whole world. The yolks are a rich deep yellow orange color. Karen keeps saying shr should sell them to the local restaurants in her area. Martha's eggs would make their food taste so much better. Hi Uncle Carlos. You are looking good. Karen saw that bowl the eggs were in and she said it is absolutely beautiful.
    What did everyone do over the weekend? I was helping Dave with the tile work again. Lots of work in that project but it will look so nice when it is done.
    Raining here so no deck time. I guess I will check out Animal Planet

    Now I've been thinking all this time that the eggs don't peel easy because they were over cooked. Mom follow Martha's tip for hard boiling eggs and it does work every time, perfect yolk without the dark green circle - yummy.

    So Martha is taking hard boiled eggs to a wedding? Really?

    So can I tell you I'm sick of the rain. The only day we didn't get rain in a week was Saturday but it returned on Sunday and looks like today and the rest of the week is going to be wet. I wonder what mom will do for her 4th of July party - maybe get a tent?Mom has a short week, only working Monday and Tuesday :) I sure do hope the weather cooperates.

  • Hello ladies, Kirby here.
    Yep, it’s me again. Some mornings when I go to Martha’s home page, the DW does not show up. That has been the case many times and happened again on Friday. I don’t know why this is but I was unable to see if you were making another posting. Well, I’m back today and can report on the weekend I had. It rained again yesterday and the cat got a little wet again. He is going to have to learn to stay closer to the house and he won’t get wet. I like it inside where it is cool and no bugs flying around my head. As for me, I don’t like hard boiled eggs that much but boy does the cat like them. Well, I’m getting ready for more rain this afternoon; that’s summer for you in the south.

    Mmmmmm good!!! Hard boiled eggs--yummo!! And getting to see Uncle Carlos, is a great way to start the week. It is good to give out something healthy at a wedding I guess. I didn't know hard boiled eggs were the tradition. At least they are eating them and not egging the bride and groom. Hehehehehehe!! I am excited to hear of everyones weekend. Mom and I did a lot of cleaning while the guys worked on Weston's house. I am sad about our garden---we have fungus in the vegetable garden soil. That is why the planting twice. The fungus is killing stuff--even the 6 year old asparagus. Came from purchased garden soil in bags that the folks used to top the seeds off with--now clear plastic over the entire garden and sterilizing all the tools from the tiller to dandylion diggers. OMG!!! I am glad my landscaping company does things by paw. The county extension says a lot of this is being put out there from ground up Katrina. Be careful everyone. I think we will get to have drives to Farmer's Markets in August. Oh good, road trip. Short one anyway. Thank you all for the prayers for my Dad. I will keep you posted--it is good it is early stage. Have a GEM of a day.

  • Good morning ladies & Uncle Carlos,
    That sure was a pretty plate of eggs.
    We had a quiet weekend with off and on rain showers. Not too bad though, Papa & I did get some yard work done.
    Something funny happened this morning. Mimi dropped my food bowl and little kibbles went alllll over the place. Well, I jumped right in and started eating, it was fun. Mimi was on the floor pushing the kibbles into a pile and I was jumping in to eat! She won. She picked up my food & put it back in my bowl. I did headed back to the laundry room to look for a stray or two. Only found one little, teeny weeny piece. The Mimi had to mop the floor 'cause of my tongue! Too Funny. We both were laughing!

  • Thanks for showing those pretty eggs, Sharkey! Francesca Baby and my FirstMama had chickens for a while (Zoe thought they were for her for dinner once, oops!) and they laid very pretty eggs. FirstMama ate so many eggs we were all thinking she was going to start to cluck.
    Mom is glad your Miss Martha knows the proper way to make hard boiled eggs. Mom learned that method from her Grandma years and years ago and whenever she deviates from it, she is very sorry. Although I think she goes longer than 13 minutes; it has been a while since she's made them. That's Dad's job because he makes the Best. Deviled. Eggs. Ever.

    So nice to see the beautiful hard boiled eggs and directions for boiling them properly. Mom loves boiled eggs and it is a Sunday morning tradition here. I manage to wrangle a piece or two.. yummy. Martha has some beautiful chickens and we often refer to the pictures in her magazine to identify different kinds of birds.
    Ruby, our prayers go out to your papa, Mom and you. Rebel, how sweet to hear your story about the food kibble on the floor. Mom takes care of a pitbull at work and he tips his bowl out on purpose to eat off the tile floor. Kitty, are you staying dry? We had another thunder boomer here this morning but its clearing up now. Dudley, did you have a good weekend? Zoe, hope our weather stays dry for your Mom's fourth party. Maddox, do you watch fireworks on t.v.? We catch the NYC Macy's fireworks and Boston fireworks on t.v. here.

  • Oh my, I posted today Monday on yesterdays post...oh well, I'll do today the real Monday post.
    I'm the worst egg boiler, even with these instructions :-(
    Gorgeous day, sunny and cool...just the way I like it! Kitty is out strolling or should I say trolling the perimeter of the property trying to rid some of the many new baby chippies...I gave up saying, NO! too many chippies to save...he he :-)
    We have a new dead animal smell, but can't say for sure it's new or the old 3 month one...yucky!

  • Hello everyone,
    I know all of you from my neck of the woods are getting soaked again. My, Mis said it's been many years since she's seen this much rain without it being caused by hurricanes. That's one thing we don't need now. She and her sister said that if people along a line from us here in NC to you, Ruby and those others dealing with drought in the West, would buy a section or two of PVC, we could send water your way. It may take a few months to get there as we don't have a very strong pump on this end. HHA! The bullfrogs are loving it and creating some mighty sounds in the woods.
    Well my weekend was quite exciting. I got that raccoon that had been coming in and eating cat food. It decided to venture through the inside cat door, into the house and I got it. It was quite a bit of excitement on Friday night. It also bought me a ticket to see the vet Saturday morning for a rabies booster. Can't be too careful, but Mis didn't think there was much danger. So watch out for those Raccoons!
    Ruby, it's sad to hear your Dad's news, but we are happy to hear it was caught early. You need to become his therapy dog. That way you could go with him to relax him during any procedures. Mis' saw a pomerainian at the cancer center the other day that was there to relax her owner during chemotherapy.
    Okay, it's lunch time and the cousins and I are waiting very nicely. Hard boiled eggs anyone!

  • Hello everyone!
    We've had afternoon rains and thunderboomers here in Lebanon, Ohio for the past 4-5 days. Just when we think the coast is clear, BOOM! and Brutus heads for the basement.
    Ruby, we are praying daily for your Dad. We agree with Dixie Boy, you should go along with him. Our Mom works in a hospital and they have a little red-headed curly something doggie named Rusty who comes a couple times a week to visit all the sick people. My mom says she would rather have Brutie and me visit her, if she were in the hospital, than some of her family. We second that!
    Those hard boiled eggs are making me hungry! And, yes, kibble eaten from the floor tastes so much better than from the bowl.
    Must be off our human cousin, Kayla, is bugging me.

  • Hi Girls,Uncle Carlos and Glue Squad Buddies, I've never tried a hard boil egg and cooked for 13 minutes. I will have to pass this info onto Mom and maybe she will it soon. They sure do look yummy! Well, busy weekend at the house. It all started Friday when Mom & Dad had a new floor installed; now called Mom's office. The installers came early and wouldn't you know, they didn't let me help. I was secluded to the porch. Okay I can deal with that; however, Mom & Dad put together a new desk andn of course, I tried to help. But nooo - I had to watch from afar and there went my afternoon walk and my DW post time. No fun for poor me on Friday. Maddox, I was good the weekend; it was really too hot to stay out too long. Now it's Monday and I get late afternoon computer time, but I guess late is better never. Ruby, keeping my paws crossed for your Dad, sending positive thoughts. Rebel, keep looking, you never know when you will find a kibble, hehe. Hope all my friends are doing well. No special plans right now for the holiday, Dad is on call for work this week, so he will be sticking close to home.
