And just in case you two find yourself in a pickle this summer with all the heat and all, if it's OK, I'd like to share some recipes to relish. I mean, some relish recipes! :) HOT DOG RELISH Yields: 10 to 12 pints Pan Size: stockpot 20 green tomatoes 4 c. chopped cabbage 8 c. chopped onions 24 green peppers, chopped 12 red peppers, chopped 1 c. salt 12 c. sugar 8 c. vinegar 3 tbsp. mustard seed 3 tbsp. celery seed 1 tbsp. turmeric 3 tbsp. dry mustard Grind tomatoes, cabbage, onions, and peppers. Mix with salt in crock. Let stand overnight. Drain. Combine ground vegetables with sugar, vinegar, mustard seed, celery seed, turmeric, dry mustard and 4 cups water in stockpot. Bring to a boil. Cook for 3 minutes. Spoon into hot sterilized jars, leaving 1/2 inch headspace; seal with 2-piece lids. Process in boiling water bath for 10 minutes. And here's one more beet-the-heat recipe! :) NEW ENGLAND BEET RELISH Yields: 2 quarts 1 qt. finely chopped fresh cabbage 1 qt. finely chopped cooked beets 1/2 c. grated horseradish 2 c. sugar 1 tbsp. salt 1 tsp. pepper 1/4 tsp. red pepper *Cider vinegar Combine cabbage, beets, horseradish, sugar and seasonings in bowl; mix well. Spoon into jars. *Add enough vinegar to cover. Store covered in refrigerator. PS.
